BDR. Tell us about the Chalet du Mont d’Arbois…

O.A. We know the Chalet du Mont d’Arbois and the chef Julien Gatillon because we both worked there before, and we came back to occupy the positions of Director of the restaurant and Chef since 2012. Owned by the family of the Baron Benjamin de Rothschild, the five-star Chalet du Mont d’Arbois, a Relais & Châteaux hotel in Megève, represents the happy marriage of traditional mountain architecture, strict codes of grand hospitality and the powerful charm of a family home lovingly tended to, where every object and decoration evokes the family history at Mont d’Arbois. Our restaurant, The 1920, two stars in the 2016 Michelin Guide, offers a contemporary cuisine of French gastronomy, focused on seasonal produce and in harmony with the lifestyle advocated by the Rothschild family.

How do you see the house Champagne Barons de Rothschild in the Champenois universe?

O.A. Last born of the great Champagne Houses, the House has emerged to offer us today a full range of Champagnes with an exceptional 2006 Vintage.

What would be the champagne of our range that you would recommend at a dinner?

O.A. Without hesitation the Cuvee Vintage 2006, we find in this Champagne a balance, a finesse and a complexity to accompany a menu, from appetizer to dessert, on dishes such as Turbot, shellfish and even a poached poultry, which remains a classic of our menu for the winter season.

Your favourite food and Champagne Barons de Rothschild pairing?

O.A. One of my favourite cuvees remains the Extra Brut. Made by blending Chardonnay and Pinot Noir, this Champagne combines finesse and freshness and goes perfectly with one of our summer entrees, a base of crab meat, glazed vegetable juice and crispy vegetables.

Your best memory of Champagne Barons de Rothschild?

O.A. The first time I tasted the Cuvee Vintage 2006. It was at Vinexpo when the Baroness Benjamin de Rothschild made us discover it in preview, by gathering us with the Chef Julien Gatillon and our assistants, a moment of conviviality and sharing.
